Nilk & Cookies @ Soho House with Rachel Novetsky

No thats not a typo… Nilk as in Nut Milk. Such a cool event at soho led by Private Yoga Instructor- Rachel Novetsky. Not only is she amazing, & so is her body but the class was intense. It was challenging with a nice fusion of mat pilates.

 After the event Rachel emailed all of the attendees directions from the demo:
Homemade Anahearta Nilk
Ingredients:
1 large handful  raw almonds
1 large handful raw cashews
1 large bottle of coconut water
1 empty container
1 spoon
1 bean strainer
Blender or vitamix
Optional ingredient combinations
Cinnamon: 1 date or 1 tsp coconut sugar , a Tbs powdered vanilla bean powder or 1 Tbs vanilla extract, 1 pinch of pink Himalayan sea salt, 10 good shakes of cinnamon
Chocolate: follow cinnamon option and substitute cinnamon with 3-4 Tbs unsweetened cacao powder.
Blends almonds and cashews on low setting until ground but not too fine. While on low slowly add coconut water or H2o. Add additional ingredient cover and blend on high setting for 10 seconds.
Strain nilk and save almond and cashew for cookies, smoothies, cereal etc.
Milk is good for 5 days.
Shake first! Separation is natural!!!
Double up: same recipe, double up the nuts and coconut water. Strain first batch half way and add more coconut water to blended mixture, continue until you have no more coconut water. ( no need to recreate the wheel 😉 )
Superfood nilk cookies
Makes: 1 dozen small treats
Ingredients:
The remaining Almonds and cashews from Nilk. Strained well!
2 handfuls of medjool dates chopped ( 10 dates)
 Large handful of raw chestnuts
Small handful of raw cashews
Pinch of pink Himalayan sea salt
1 tsp. vanilla powder or extract
1 Tbs chocolate Vega powder ( for extra energy) can substitue with cacao powder or your favorite raw chocolate.
2 Tbs coconut butter
Toppings:
Optional chia seeds, hemp seeds, cacao nibs, unsweetened coconut, crushed brown rice cereal or any favorite cereal.
**** anything that tastes good to you can be used and will taste good. Explore variations and think outside the box xxx
Directions:
Blend dry ingredients and add dates slowly. Adding the butter with the dates helps blend. Be careful not to fry your blender. Stir blend repeat.
Roll out bite size treats. Cookies can be kept in the fridge for 3 weeks or frozen is the way i prefer them 🙂
